  • 13 oz. white crab meat
  • 1 pink grapefruit, peeled and sliced
  • 1¼ cups arugula
  • 3 scallions, sliced
  • 7 oz. snow peas, halved
  • Salt and pepper, to taste

Watercress Dressing:

  • 2 cups watercress, tough stalks removed
  • 1 tbsp. Dijon mustard
  • 2 tbsp. olive oil

To Serve:

  • 4 chapattis

Chicken, Pineapple & Rice Salad Recipe.  Here’s a delightful and filling whole grain rice dish that’s very tasty and easy to make.  This recipe for chicken fried rice is made from fresh pineapple and boneless chicken. First cook the whole grain rice and then grilled the chicken or you can use leftover chicken if you have one.
