Chicken, Pineapple & Rice Salad Recipe

Chicken, Pineapple & Rice Salad Recipe.  Here’s a delightful and filling whole grain rice dish that’s very tasty and easy to make.  This recipe for chicken fried rice is made from fresh pineapple and boneless chicken. First cook the whole grain rice and then grilled the chicken or you can use leftover chicken if you have one. Mix the rice, grilled chicken and vegetables, season to taste and drizzle your Mustard dressing, lightly toss the salad and serve. If you prefer a spicy rice salad you can add thinly sliced fresh red chilli or chilli flakes.

Chicken, Pineapple & Rice Salad Ingredients:

  • 4 chicken breasts, boneless & skinless about 4oz each cooked
  • 1 cup whole grain rice, cooked
  • ½ pineapple, chopped
  • 1 red bell pepper, chopped
  • 3 scallions, chopped
  • ¼ cup dried blueberries
  • Salt and pepper

Mustard Dressing:

  • 3 tbsp sunflower oil
  • 4 tbsp Dijon mustard
  • 1 tbsp red wine vinegar

Cooking Instructions:

  • Dice the chicken and put it in a large bowl with the rice.
  • Stir in the pineapple, bell pepper, scallions, and blueberries.
  • Season with salt and pepper to taste.
  • Make the dressing by mixing all the ingredients with 2 tablespoons of water.
  • Season with salt and pepper to taste.
  • Spoon the dressing over the chicken mixture and serve straight away.
  • You can add some cashew or any nuts you like to add some crunch.

    Wow!!! I have no idea that rice could be an ingredient for salad.. I’m sure this will bring me a unique taste that I’m waiting for. This salad is outstanding:) It was so cool and the looks is so delicious.. I really want to try this at home and recommend this to my friend. yummy!
